Chimichurri – Your New Best Friend

Looking to spice things up – both figuratively and literally?!?! Same. I always am trying to switch things up and try new things. Whether it’s a workout, recipe, or hairstyle. I’m all about variety.

Assuming you’re on the same wavelength – how many of you like meat and veggies?

All of you. Well duh. You’d be crazy not to.

Let’s get more specific. How many of you like pesto? Yeah how about a fresher tasting option that’s also got a little kick to it?!?

Yeah I figured you’d be game.

Enter chimichurri. It’s the South American version of Italy’s glorified pesto. It’s divine. Once you try it I swear you won’t go back.

It’s seriously the best. Scouts honor.

So here’s what you need to concoct this glorious condiment that acts as a topper to all poultry, fish, red meat, and grilled veggies. Shit I’d even put this on a baked potato – but I’m just obsessed with the stuff – so I’ll let you be the judge of how your pair it with food.

INGREDIENTS:

  • 2 bunches of Parsley
  • 2 bunches of Cilantro
  • 1-2 jalapenos (Some like it Hot – aka me)
  • Lime
  • 6-8 cloves of garlic
  • 1 tbsp of oregano
  • ¾ cup of red wine vinegar
  • ¾ cup of olive oil
  • Salt and Pepper to taste

Got all of that? Let’s get started.

First order of business – do you have a food processor or high-powered blender like my personal favorite NutriBullet? Good. You’re screwed without this.

From here, you’ll clean and remove the leaves from your fresh parsley and cilantro. Once that’s taken care of you’ll throw those fresh smelling herbs into your food processor.

Depending on the size of your equipment you may have to pulse it in doses, so as you fill to the brim pour in some of your EVOO and/or red wine vinegar (doesn’t matter) until it’s all pulsed down. Then you’ll pour in the rest of your liquid ingredients, oregano, garlic, and your salt and pepper.

Pulse it up.

Lastly, you will acquire some gloves for safety reasons and chop up your jalapeños removing the seeds and throw those into the processor pulsing as well.

Accomplished all of this. Perfection – because the end product is your very own heaping of chimichurri.

Bottle this guy up or marinate your favorite protein and/or veggies and throw those guys on the grill and you’ll thank me later.
